Did you know that this scrumptious delight dates back over two centuries? In 1813, President James Madison second inauguration celebration included vanilla and chocolate ice cream.

Strawberry ice cream was first served in France. Its popularity quickly spread to other parts of Europe and eventually made its way to the United States where it continues to be one of the most beloved flavors today.

The history of strawberry ice cream can be traced back to 1780 when a French cookbook published "Recipes for Ices," which contained a recipe for strawberry ice cream.

This ice cream treat recipe called for sugar and water to be boiled together before being added to fresh strawberries and churned until thickened. It was then placed into molds and chilled until firm.

Today, strawberry ice cream is made using pasteurized milk, sugar, natural flavorings such as vanilla extract or fruit juices, stabilizers such as eggs or cornstarch, and frozen using an ice cream maker or freezer container.

To create unique variations on classic strawberry ice cream recipes, chefs often add different fruits or liqueurs like rum or brandy.

In addition to traditional recipes for homemade ice creams, there are also many store-bought brands that offer a variety of flavors in addition to classic strawberry.

Ingredients
 

  • Fresh Strawberries 2 ½ cups
  • Whole Milk 2 cups
  • Heavy Cream 2 cups
  • Egg Yolks 6 large
  • Sugar (Taste the strawberries for sweetness. You may want to add more sugar. ) 1 cup
  • Vanilla Extract 1 teaspoon
  • Sea Salt (If using table salt, use slightly less) ¼ teaspoon

Ingredient Substitutes

  • Coconut Milk 2 cups
  • Goats Milk 2 cups

Instructions
 

  • Step 1: In a double boiler, whisk the egg yolks and milk together until combined. Then add in the sugar and salt.
    Once everything is mixed together, place the top of the boiler over a pot of simmering water and stir constantly until the mixture thickens and coats the back of a spoon.
  • Step 2: Add 2 ½ cups of sliced or frozen strawberries to a blender. If you’re using frozen berries, let them thaw first.
    Add ¼ cup white sugar and stir until the berries are evenly coated. Let them sit for about 30 minutes so the strawberries can macerate and release their juices.
  • Step 3: After 30 minutes, add 2 cups of heavy cream, 2 cups of whole milk, 1 cup of granulated sugar, and 1 teaspoon of vanilla extract.
    Combining fresh strawberries and all ingredients together until smooth.
    Maximum flavor tip: chill in the refrigerator for at least 4 hours (or overnight).
    Chill for at least one hour.
  • After chilling your ice cream mixture, add it to your ice cream maker and follow the manufacturer’s instructions. When the ice cream is finished churning, transfer it to a freezer-safe container.
    If you do not have an ice cream maker, you can stop here and place your ice cream base into a large freezer-safe container and allow it to freeze. (IF this is your case, add one more yolk to the ice cream base as it will create a smoother, creamier ice cream, the effect an ice cream maker creates.
  • You can also use the same recipe to make other delicious flavors like raspberry, blueberry, or peach—substitute whichever fruit you prefer for the strawberries in step one.

Ice Cream Freezing Tips:

Here are some tips for freezing perfect homemade ice cream:
1. Chill the ice cream base in the refrigerator before freezing. To achieve this, chill it in the refrigerator for at least an hour (or even overnight). – this will help it freeze faster and give a smoother texture.
2. Use rock salt to lower the temperature of your ice cream machine, which will also help with faster freezing.
3. If your mixture is too runny, add more sugar or a stabilizer to help thicken it up.
4. Check on the ice cream periodically and stir during freezing to ensure an even texture.
5. Once your ice cream has finished churning, transfer it to the freezer for several hours or overnight for best results.
