Keto bread is perfect for those who are trying to stick to a low-carbohydrate diet but still want to enjoy the occasional slice of bread. It is also a great option for those who are gluten-free or have celiac disease. The almond flour and pork rinds give the bread a nutty and savory flavor, while the egg helps to bind everything together.

The bread is keto diet-friendly, as the name suggests, low in carbohydrates, and gluten-free. I have had two best friends go KETO over the last few years. I personally try to eat a low-carbohydrate diet. Our body uses carbohydrates as energy, but in excess, it becomes pure sugar running through our blood.

What Is Keto Bread? 🍞

Keto bread is just like regular bread, except it uses special ingredients to ensure you get a low-carb version without sacrificing taste. You'll find that many people use almond flour to replace wheat flour; coconut flour is another option. Both flours are high in protein and fiber, making them perfect for baking.

If you've ever tried to make low-carb bread before, you know how hard it can be to achieve the fluffy texture everyone loves. With this recipe, you won't have to worry about it because it's light and airy.

Ingredients

  • Almond Flour (Gluten Free)
  • Pork Rinds Crushed (Optional)
  • 🥚 Eggs
  • 🧈 Butter
  • Baking Powder
  • Dry Active Yeast
  • 🍯 Honey
  • 🧀 Cheddar Cheese

Instructions

  1. Bloom the Yeast/Activating - First, add four tablespoons of warm water (over 105 degrees and under 110 degrees) to a small bowl and add the dry active yeast, plus a small bit of honey. The yeast eats sugar and grows. Activating the yeast will help the bread rise and become lighter in texture.
  2. Whipping Egg Whites: Separate the egg whites from the egg yolks. Whip the egg whites with a whisk or electric mixer until they form medium-stiff peaks. Give the egg yolks in the second bowl a whisk to lighten the texture. The yolks will become lighter in color. Next, add the room-temperature melted butter and mix.
  3. Combining All The Ingredients: Add the activated yeast to a large mixing bowl. Use the foam on top. Only scrape off the top layer of yeast, the brown foam-looking stuff. Keep some water in the bottom of the bowl in case your bread dough looks too dry. Next, crush the pork rinds into the texture of breadcrumbs. Add five tablespoons to the bowl.
  4. Almond Flour is next, along with all the remaining ingredients. Start by adding one cup of almond flour and mixing. The texture will look dry. Then add in ⅓ of the whipped egg whites (you might need to whip the egg whites again to add some air back in).
  5. Note: The egg whites are the only addition of moisture. Mix in the whipped egg whites with the almond flour and dry ingredients, adding a third at a time. Combine well while keeping the whipped volume of the egg whites. Use a gentle folding technique.

Baking the Bread

Spray your bread loaf pan with non-stick spray and add the bread dough to the pan. Tap the pan against the table several times to remove extra air pockets. Bake @ 375 for 30 minutes. Allow the bread to cool for 4 to 5 minutes before cutting into it.

How Many Grams of Carbohydrates Does Keto Bread Have?

Each slice of keto bread has a total of 2 grams of carbohydrate content. The carbohydrate content of a comparable slice made from normal bread flour might range from 10 to 20 grams. If you are interested, you may use an online calculator to determine the number of carbohydrates in a certain food item.

Can I Use Coconut Flour Instead Of Almond Flour?

Yes, you can definitely use coconut flour instead of almond flour in this recipe. The two flours are very similar in terms of texture and taste. However, coconut flour is slightly more absorbent than almond flour, so you may need to add a little bit more liquid to the dough if you decide to use it.

Can You Freeze Keto Bread?

Freezing your keto bread is the best way to ensure it doesn't go stale. To do this, simply wrap each piece individually in plastic wrap and place them in the freezer. Once they've been frozen solid, transfer them to a large ziplock bag. Make sure you don't fill up the entire bag because you don't want it to break when you thaw it later.

Once you've got everything ready, take the frozen bread out of the bag and let it sit on the counter for 10 minutes. Then, gently pull one piece away from the others and pop it into the microwave for 60 seconds. Remove it immediately and enjoy it while still warm.

Which Butter Should You Use?

Regular Butter vs. Cultured Butter

  • Cultured butter contains live cultures that help preserve the milk fat. This makes cultured butter great for making baked goods because it keeps the texture soft and tender.
  • Regular butter doesn’t contain bacteria, so it breaks down faster during storage. This means that baked goods made with regular butter tend to dry out more quickly.

Grass-Fed Butter vs. Factory Farm Butter

Factory farm butter isn’t made from cows grazing on pastureland; it’s just artificially produced. Grass-fed butter is much richer and smoother than factory farm butter and has a stronger flavor. Because it’s naturally rich, it’s ideal for savory and sweet dishes.
