Banana Bread Coffee Cake w/ Cream Cheese Stuffing

This delicious, soft, and light banana bread coffee cake is perfect for any time of year. The homemade streusel topping will have you reaching for another slice before it even finishes baking!

Coffee Cake Banana Bread Ingredients

Dry Ingredients

  • 2 ¼ Cups All-Purpose Flour
  • 1 ¼ teaspoon Baking Powder
  • 1 tablespoon Baking Soda
  • 1 teaspoon Sea Salt
  • 1 ¼ teaspoon Cinnamon

Wet Ingredients

  • ½ Cup Butter / 4oz
  • 2 Whole Eggs plus one yolk
  • 1 Cup of Sour Cream
  • 1 ½ Cups of Sugar
  • 4 Bananas
  • Optional 2 teaspoons of Vanilla extract

Streusel Topping

  • ½ Brown Sugar
  • ⅓ Cup of flour
  • ½ cup of Walnuts
  • 4 tablespoons of Butter cubed, easier to mix
  • 2 teaspoon Cinnamon More is ok

Icing Mix

  • 1 Cup of Powdered Sugar
  • Juice of two lemons
  • Optional - ½ teaspoon of Vanilla Extract

Cream Cheese Filling

  • 8 oz package of Cream Cheese
  • ¼ Cup of Sugar
  • ⅓ Cup of Cake batter reserve
  • Optional 1 teaspoon of Vanilla extract

Instructions

Begin with the dry ingredients. Sift the flour to remove any lumps. Combine the dry ingredients.

    Next the wet ingredients. Combine using a hand mixer or stand mixer like a kitchen aid. Mix until you get to the ribbon stage. You'll see long lines in the batter.

    Icing Coffee Cake Banana Bread

    Use a cup with a pouring edge to control the stream of icing as you design your banana bread coffee cake. I've learned over the years I like more icing closest to the middle of the coffee cake. This gives a great bite of icing closer to the tip of the cake, ie, the first bite your company/guests will be tasting.

    • Pour the cake batter into the prepared springform pan using only half of the batter. I like using just a little bit less than half to make sure there's enough to cover the top layer.
      Then add in the cream cheese filling layer, making sure not to spread it all the way to the edges.
      TIP: Do not work the cream cheese filling all the way to the edges.
      If you go all the way to the edge the cream cheese will be noticeable around the edges of the finished coffee cake.

    • Add the remaining banana bread coffee cake batter on top of the cream cheese layer and spread it all the way to the edges. Try to make the coffee cake as level as you can.

    Chef Tips

    • Bake on the middle rack in the oven to promote even cooking
    • Plating: Using some of the cream cheese filling to plate. Add some underneath the slice of coffee cake for a pop of creaminess.
    • With coffee cakes, baking a little bit longer versus a shorter duration is the safest decision to perfectly cooked coffee cake.
    • Do not premix the batter and store longer than 30 minutes before baking.
    • Banana bread coffee cake freezes nicely. I wouldn't freeze longer than 1 month for best results.

      Little bit confused on the Wet Ingredients. You are making this 2 ways? Either with 2 eggs plus one yolk and 2tsp Vanilla or, 2 eggs and (optional) Vanilla Extract.

      Whats the difference texture-wise?

        Yes, 2 whole eggs plus an additional egg yolk. The extra egg yolk increases the coffee cake texture. The vanilla extract is something I would add, optional because the recipe is still great without it. Enjoy!
