The Cake Mix

Dry Ingredients

  • 2 ¼ cups All Purpose Flour
  • 1 ¼ teaspoon Baking Powder
  • 1 Tablespoon Baking Soda
  • 1 teaspoon Sea Salt
  • 1 ¼ teaspoon Cinnamon

Wet Ingredients

  • ½ cup Butter 1 stick 4 oz
  • 2 Whole Eggs plus one yolk
  • 1 cup Sour Cream
  • 1 ½ cups Sugar
  • 4 whole Bananas
  • Optional 2 teaspoon of Vanilla extract

Streusel Topping

  • ½ cup Brown Sugar
  • cup flour
  • ½ cup Walnuts
  • 4 Tablespoons Butter cubed, easier to mix
  • 2 teaspoons Cinnamon More is ok

Cream Cheese Filling

  • 8 oz Cream Cheese 1 package
  • ¼ cup Sugar
  • cup Cake batter Reserve some of the batter mix
  • Optional 1 teaspoon of Vanilla extract

Icing Mix

  • 1 cup Powdered Sugar Also known as 10X sugar
  • 2 Lemons Juiced
  • ½ teaspoon Vanilla Extract Optional

Step By Step Instructions

  • Step #1: Begin with the dry ingredients. Sift the flour to remove any lumps. Combine all the dry ingredients together.
    2 ¼ Cups All-Purpose Flour
    1 ¼ teaspoon Baking Powder
    1 Tablespoon Baking Soda
    1 teaspoon Sea Salt
    1¼ teaspoon Cinnamon
    Begin with the dry ingredients. Sift the flour to remove any lumps. Combine the dry ingredients together
  • Wet Ingredients: Combine using a hand mixer or kitchen aid stand mixer. Mix until you get to the ribbon stage. You'll see long lines in the batter.
    ½ Cup Butter / 4oz
    2 Whole Eggs plus one yolk
    1 Cup of Sour Cream
    1 ½ Cups of Sugar
    4 Bananas
    Optional 2 teaspoons of Vanilla extract
    I find working with the hot bananas combine mix in together better and creates a smoother batter texture.
  • Using a bowl with high sides, using a hand or electric mixer, mix together
    1½ cups of Sugar
    ½ cup Butter / 4oz, and 0cream together
    2 Eggs
    4 Bananas
    1 cup of Sour Cream
    (optional: Vanilla extract)
    Suggested to add the bananas straight out of the oven. They will be softer and mix easier.

How to Ripen Bananas In The Oven Quickly

  • Using a cookie sheet, lay out each banana, giving room between each banana. Roast in a preheated oven of 300 degrees for 20 minutes. Then make a long cut up and down the length of the banana to remove once cooked.
    While the bananas are hot, add them to the mixing bowl with the wet ingredients. I find working with the hot bananas combine mix in together better and creates a smoother batter texture.
    Using a cookie sheet, layout each banana giving room between each banana. Roast in a preheated oven of 300 degrees for 20 minutes. Then make a long cut up and down the length of the banana.

Cream Cheese Filling

  • Whip up the cream cheese filling. Mix the following ingredients until smooth.
    8 oz package of Cream Cheese
    ⅓ Cup of Sugar
    ⅓ Cup of Cake batter reserve
    Optional 1 teaspoon of Vanilla extract

Making the Cake

  • Pour the cake batter into the prepared springform pan using only half of the batter. I like using just a little bit less than half to make sure there's enough to cover the top layer.
    Then add in the cream cheese filling layer, making sure not to spread it all the way to the edges.
    TIP: Do not work the cream cheese filling all the way to the edges.
    If you go all the way to the edge the cream cheese will be noticeable around the edges of the finished coffee cake.
    Pour in the cake batter into the prepared springform pan using half of the batter. I like using just a little bit less than half to make sure there's enough to cover the top layer.
  • Add the remaining banana bread coffee cake batter on top of the cream cheese layer and spread it all the way to the edges. Try to make the coffee cake as level as you can.

Coffee Cake Streusel Topping

  • What's the best part of a coffee cake? No, not coffee silly; it's the streusel topping. Brown sugar, butter, and cinnamon come together into a crisp crust on top.
    Using a food processor or crush inside of a large plastic bag. Combined all ingredients listed below. Mix well, but not into a powder; you want some texture and lumps of butter.
    ½ Brown Sugar
    ⅓ Cup of flour
    ½ Cup of Walnuts
    4 tablespoon of Butter cubed, easier to mix
    2 teaspoon Cinnamon More is ok
    Using a food processor or crush inside of a large plastic bag. Combined all ingredients listed below. Mix well, but not into a powder
  • Top the coffee cake with the Streusel before baking.

Baking

  • Bake in a preheated oven at 350-degree oven for around 1 hour or until a toothpick can be inserted and removed cleanly.
    Drizzle icing over the top of the cake. Start from the middle and work out to the edges.

Icing The Cake

  • Use a cup with a pouring edge to control the stream of icing as you pour. I've learned over the years, I like more icing closest to the middle of the coffee cake. This gives a great bite of icing closer to the tip of the cake, ie, the first bite your company/guests will be tasting.

Chef Tips

  • Bake on the middle rack in the oven to promote even cooking
  • Plating: Using some of the cream cheese filling to plate. Add some underneath the slice of coffee cake for a pop of creaminess.
  • With coffee cakes, baking a little bit longer versus a shorter duration is the safest decision to perfectly cooked coffee cake.
  • Do not premix the batter and store longer than 30 minutes before baking.
  • Banana bread coffee cake freezes nicely. I wouldn't freeze longer than 1 month for best results.
