Just like our Pumpkin Roulade With Crystallized Ginger Buttercream, these ultimate fudge brownies are incredibly easy to make! From the moment you start measuring your ingredients to pulling these heavenly treats out of the oven, you're looking at under an hour of baking time. ⏲️

Why You'll Love This Recipe

  • Simple Steps: Easy-to-follow instructions make baking these brownies a breeze.
  • Soft and Chewy Texture: Thanks to the unique use of pastry flour, these brownies have a tender, melt-in-your-mouth quality.
  • Festive and Fun: Whether it's a holiday gathering or a casual get-together, these brownies add a touch of elegance.

Ingredients

  • 🍫 Chocolate: Opt for Ghirardelli chocolate for its renowned quality and rich taste. It's the heart of these brownies, giving them their luxurious chocolatey essence.
  • Pastry Flour: The game-changer! Pastry flour is lighter in gluten compared to all-purpose flour, making your brownies tender and soft to the bite.
  • 🧈 Butter: Begin with one stick of unsalted butter. This allows you to control the salt level, ensuring the perfect balance of flavors.
  • ☕ Eggs: Use three extra-large eggs. Remember to mix thoroughly at each step for a smooth, well-incorporated batter.
  • Vanilla Extract: A splash of vanilla extract adds a layer of complexity to the flavor profile.
  • ☕ Honey: Sweeten your brownies with two tablespoons of honey. It's not just about sweetness; honey also contributes to the moist texture.
  • ☕ Coffee: A secret touch! Add ground coffee or espresso. This unique addition enhances the chocolate flavor, adding depth without a coffee aftertaste.
  • 🧂 Salt: Just a pinch! Salt is a flavor enhancer, bringing out the best in all the other ingredients.

Home To Make Homemade Pastry Flour

Making pastry flour at home is quite simple and requires just two common ingredients: all-purpose flour and cornstarch.

Here's how you can prepare pastry flour on your own:

Ingredients:

  • All-purpose flour - 1 Cup
  • Cornstarch - 2 Tablespoons

Instructions:

  1. Measure the Ingredients: To make pastry flour, you'll need a ratio of 1 cup of all-purpose flour to 2 tablespoons of cornstarch. You can adjust this ratio based on your specific recipe needs.

How To Make Le Cordon Bleu Brownies

Chocolate and one stick of butter being melted together.
  1. Melt the Chocolate and Butter: Start by melting the Ghirardelli chocolate over a double boiler or in the microwave with a stick of butter. Ensure the mixture is smooth and well combined.
  2. Mix in the Ingredients: Once the chocolate and butter are melted and combined, begin adding the other ingredients. Start with the eggs, ensuring they are well beaten into the mixture. Then, add the ground coffee, both white and brown sugar, honey, vanilla extract, and sea salt. Stir each ingredient thoroughly before adding the next.
  3. Sift in the Pastry Flour: Sifting the pastry flour before adding it to the mixture is crucial to avoid lumps. This step ensures a smooth batter, which is key to the texture of the brownies.
  4. Prepare the Baking Pan: Line an 8-by-8-inch baking pan with parchment paper or alternatively, wrap an oven-safe pot in aluminum foil. This trick aids in easy removal and cleanup after baking. Don't forget to lightly spray the lining with cooking spray to prevent sticking.

Baking Your Brownies

  • Prepare Your Pan: Line a regular pot with aluminum foil. This little trick makes removing the brownies a breeze. Don't forget to spray it with cooking spray to prevent sticking.
  • Bake to Perfection: Pour your brownie mixture into the prepared pan. Bake at 350°F for about 30-45 minutes. The key is to look for that perfect balance - a crusty top with a soft, fudgy center.

Expert Tips for Perfect Brownies

  • Cooling the Chocolate: Let it cool a bit before adding eggs to prevent them from cooking.
  • Sifting Flour: This prevents lumps for a smoother batter.
  • Checking Doneness: A toothpick should come out clean when inserted into the center.

FAQs: All Your Brownie Questions Answered

Got questions? We've got answers! From "Can I use a different type of flour?" to "How do I know when they're done?", this section will cover all your brownie-related queries.

Can I Use All-Purpose Flour Instead Of Pastry Flour?

Yes, you can use all-purpose flour, but keep in mind that pastry flour is lower in protein, which gives the brownies a softer texture. Using all-purpose flour may result in a slightly denser brownie.

Is The Coffee Flavor Strong In These Brownies?

No, the coffee enhances the chocolate flavor and is not dominant. You won't taste the coffee, but it adds depth to the chocolate.

Can I Make These Brownies Without Eggs?

Eggs are a key ingredient for the texture of these brownies. However, you can try egg substitutes like applesauce or mashed bananas, but the texture and taste will be different.

How Do I Know When The Brownies Are Done Baking?

The brownies are done when a toothpick inserted in the center comes out with a few moist crumbs. Be careful not to overbake; they will continue to set as they cool.
