Keto bread is perfect for those sticking to a low-carbohydrate or gluten-free diet but still craving bread. This recipe uses almond flour and pork rinds to create a delicious, nutty, savory flavor while keeping carbs low.

Ingredients

Sliced keto bread.

It's also gluten-free, making it suitable for folks with celiac disease or gluten sensitivities. With this recipe, you won't have to sacrifice the fluffy texture you love in regular bread.

Cheddar Cheese (Shredded)1 cup (optional)

Instructions

Step 1: Bloom the Yeast

  1. In a small bowl, add 4 tablespoons of warm water (between 105°F and 110°F).
  2. Add the dry active yeast and 1 tablespoon of honey. Stir gently and let it sit for 5 minutes or until a foam forms on top.

Step 2: Prepare the Egg Whites

  1. Separate the egg whites from the yolks.
  2. Whip the egg whites with a whisk or electric mixer until medium-stiff peaks form.
  3. In another bowl, whisk the egg yolks until they lighten in color. Then, add the melted butter and mix well.

Step 3: Combine Ingredients

  1. Add the foamy yeast mixture (scrape only the top foam) to a large mixing bowl.
  2. Crush the pork rinds into breadcrumbs and add 5 tablespoons to the bowl.
  3. Gradually mix in 1 cup of almond flour. The mixture will appear dry.
  4. Slowly fold in ⅓ of the whipped egg whites at a time, using a gentle folding technique to maintain the airiness. This will be your only source of moisture for the dough.
  5. Note: If the dough seems too dry, use a bit of the leftover water from the yeast mixture.

Step 4: Bake the Bread

  1. Preheat your oven to 375°F (190°C).
  2. Spray a loaf pan with non-stick spray and pour the bread dough into the pan.
  3. Tap the pan on the counter a few times to remove any air pockets.
  4. Bake for 30 minutes or until the top is golden brown.
  5. Allow the bread to cool for 5 minutes before slicing.

  • Coconut Flour: You can substitute with coconut flour, but remember to adjust the liquid. Use ¼ to ⅓ cup of coconut flour and an extra egg for every cup of almond flour.
  • Add-Ins: Feel free to mix in shredded cheddar cheese, herbs, or garlic for extra flavor.
  • Butter Choice: Grass-fed butter has a richer flavor than regular butter, making it ideal for both savory and sweet recipes.

Storage and Freezing

Storing Keto Bread

  • Room Temperature: Store the keto bread in an airtight container at room temperature for up to 3 days. To keep the bread fresh and soft, make sure it's completely cooled before sealing it in the container.
  • Refrigeration: For longer storage, you can refrigerate the bread. Wrap it in plastic wrap or foil, then store it in an airtight container. The bread will stay fresh in the refrigerator for up to 1 week.

Freezing Keto Bread

  • Freezing Whole Loaf: If you plan to freeze the whole loaf, allow it to cool completely. Then, wrap it tightly in plastic wrap, followed by a layer of aluminum foil, and then place it in a freezer-safe bag. The bread can be frozen for up to three months.
  • Freezing Individual Slices: Slice the bread before freezing to make it easier to enjoy later. Wrap each slice individually in plastic wrap, then place the wrapped slices into a freezer-safe bag. This way, you can thaw one slice at a time.
  • Thawing and Reheating: Thaw a slice at room temperature for about 10-15 minutes when ready to eat. You can also warm it up by microwaving it for 30-60 seconds. Alternatively, toast the slices directly from frozen for a crispy texture.

  • Regular Butter vs. Cultured Butter: The cultured butter contains live cultures that help preserve the milk fat, keeping baked goods soft and tender for longer. Regular butter, while still delicious, breaks down more quickly during storage, meaning bread made with regular butter might dry out faster. For keto bread, grass-fed butter is recommended because it offers a richer flavor compared to factory-farm butter.

Can I make this bread without yeast?

Yes, but the texture will be denser without yeast. You can add more baking powder or use baking soda and vinegar as a leavening substitute.

How many carbs are in each slice?

Each slice has approximately 2 grams of carbohydrates, making it perfect for keto diets. A slice of regular bread can have anywhere from 10 to 20 grams of carbohydrates.

Can I freeze keto bread?

Yes, you can! Freezing your keto bread is the best way to prevent it from going stale. Wrap each slice individually in plastic wrap and store them in a freezer-safe bag. To reheat, simply microwave a slice for 60 seconds.

Can I use coconut flour instead of almond flour?

  • Bloom The Yeast / Activating
    First, add 4 tablespoon of warm water (over 105 degrees and under 110 degrees) to a small bowl and add the dry yeast, plus a small bit of honey.
    The yeast eats sugar and grows. Activating the yeast will help the bread rise and become lighter in texture.
  • Whipping Egg Whites
    Then separate the egg whites from the egg yolks. Whip the egg whites with a whisk or electric mixer until they form medium-stiff peaks.
    In the second bowl with the egg yolks, give them a quick whisk to lighten the texture. The yolks will become lighter in color. Next, add the room-temperature melted butter and mix.
  • Combining All The Ingredients
    Next, add the activated yeast to a large mixing bowl. Use the foam on top. Only scrape off the top layer of yeast, the brown foam-looking stuff. 
    Keep some water in the bottom of the bowl in case your bread dough looks too dry. 
    Next, crush the pork rinds into the texture of breadcrumbs. Add 5 tablespoon to the bowl.
  • Almond flour is next, along with all the remaining ingredients. Start by adding one cup of almond flour and mixing. The texture will look dry. 
    Then add in ⅓ of the whipped egg whites (might need to whip egg whites again to add some air back in). 
    Note: The egg whites are the only addition of moisture. 
    Mix in the whipped egg whites with the almond flour and dry ingredients, adding a third at a time. Combine well while keeping the whipped volume in the egg whites. Use a gentle folding technique.

Baking The Bread

  • Spray your bread loaf pan with non-stick spray and add bread dough to pan.
    Tap the pan against the table a few times removing extra air pockets.
    Bake @ 375 for 30 minutes.
    Allow the bread to cool for 4 to 5 minutes before cutting into it.
