Medium chop on the vegetables, poblano, onion bell pepper, garlic and add to the pot.
Place the pork shoulder on top. Add the fire roasted tomatoes, bbq sauce and salt. Then cover with water.
Turn the crockpot on high for 15 minutes then turn down to low. Cook until tender. About 6 to 8 hours.
